Caramel Brownie Cheesecake

Ingredients:
The crust is simply one box of your favorite brownie mix!

Prep the brownie mix according to the package. Using a greased spring form pour in the brownie batter and bake as it instructs on the box.

I use store bought caramel sauce and hot fudge.

Once the brownies are done and cooled pour some of the caramel sauce over the brownie crust.

Next prep the cheesecake!

White Chocolate Cheesecake Filling

12 ounces white chocolate chips

1 Cup heavy cream

3 Blocks of cream cheese, at room temperature

1/4 Cup confectioners’ sugar

2 Teaspoons vanilla extract

To make the filling, in a heavy saucepan over medium heat, combine the white chocolate and heavy cream, stirring constantly until melted and smooth.

Remove from the heat and refrigerate, stirring occasionally until cool, approx. 30 minutes.

In a large bowl, combine the cream cheese, confectioners sugar and vanilla extract. Using an electric mixer set on medium speed beat until well blended.

Add the cooled white chocolate mixture and beat until light and fluffy, approx 2 minutes.

Pour the filling over the brownie, smooth with a rubber spatula. Cover with aluminum foil and refrigerate overnight.

Once ready to serve drizzle with more caramel sauce and fudge sauce.

Hunny Bunny Baker

Welcome to my baking blog. My name is Beth and I am by no means a professional baker. I am completely self taught but I have found baking as an outlet for my creative side. I am a former Art teacher turned stay at home Mom. With my little Hunny Bunny Charlie (hence the name of the blog) running around at my feet willing to sample Mommy's baked goods has given me a good opportunity to bake what I love.  When cooking I usually end up covered in flour and the kitchen becomes quite a mess but my husband says it's the artist in me! So enjoying the sweeter things in life and having fun doing it have become my words to live by. Hope you enjoy some of these fun recipes!
