Chocolate & Peanut Butter Chip Pretzel Cookies


Ingredients: Makes about 24 cookies!

1 1/2 cups of all purpose flour
1/2 tsp. of salt
1/4 tsp. of baking soda
1/2 cup of butter at room temperature
1/2 cup of tightly packed light brown sugar
1/3 cup of granulated sugar
1 egg (beaten)
1 tsp vanilla extract
1 cup milk chocolate chips
1/2 cup peanut butter chips
1/2 cup broken up pretzel pieces
Preztel Salt or Sea Salt

Directions:
In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
In a larger bowl, beat the butter and sugars together on medium speed until light and fluffy (about 2-3 minutes). On low speed, slowly add the beaten egg and vanilla extract. Beat to combine, scrape down the sides of the bowl.
Add the flour mixture and beat just until there are no more streaks of flour. Stir in the chocolate chips, peanut butter chips, and preztels. Cover and refrigerate for an hour.
Preheat the oven to 350F. Line baking sheets with parchment paper. Scoop out well rounded tablespoonfuls of the dough and sprinkle with pretzel salt. Leave about 2 inches between each ball. Bake for 10 minutes. If you prefer crispier cookies increase the baking time by 1-2 minutes. Allow the cookies to cool on the baking sheet for a few minutes before removing.

Pecan Pancakes with VT Maple Syrup!

Ingredients:

1 Egg
1 Cup of Flour
1 Tablespoon of Baking Powder
2 Teaspoons of Sugar
1/4 Teaspoon of Salt
3/4 Cup of Milk
1 Tablespoon of Veg. Oil
Splash of Vanilla Extract
1/2 Cup Chopped Pecans
Real Vermont Maple Syrup

Combine all ingredients and mix. Yields about 2 large pancakes. You might need to add a little more milk depending on the the thickness of the batter. Enjoy!

Oatmeal Chocolate Chip Cookies!


Ingredients:
1 Cup of Butter (2 sticks)
1 Cup of Sugar
1 Cup of Brown Sugar
2 Eggs
1 Teaspoon of Vanilla
2 Cups of Flour
1 Teaspoon of Baking Soda
1 Teaspoon of Salt
1/2 Teaspoon of Cinnamon
3 Cups of Oats 
1 Package of Chocolate Chips
1/2 Cup of Chopped Walnuts (optional) 

Combine Butter and Sugar. Then Add the Eggs and Vanilla. Add the Flour, then the Baking Soda, Salt and Cinnamon. Lately add the Oats, Chocolate Chips and Nuts (Optional) I mix everything in my Kitchen Aid mixer. 

Place on a cookie sheet lined with parchment paper. I use a cookie scooper so about a tablespoon of the dough. Bake at 375 for 8 to 10 minutes! They are so delicious!

Homemade Nutty Granola!

Ingredients:

4 Cups Old Fashion Oats
1/2 Cup Chopped Almonds (or Almond Slivers)
1/2 Cup Chopped Pecans
1/2 Cup Chopped Walnuts
1/2 Cup Coconut Sweetened Coconut Flakes
1/2 Teaspoon's Cinnamon
Pinch of Salt
Toss all above together. Then Add...
1/3 Cup Vegetable Oil
1/2 Cup Brown Sugar
1/4 Cup of Maple Syrup (The Real Stuff)
2 Tablespoons of Honey
1 Teaspoon on Vanilla
Stir Well and pour onto cookie sheet. Preheat oven to 325 cook for 25 minutes. Let it cook for 15 minutes then give it a stir or flip then cook for remaining 10 minutes until golden brown.
