Carrot Cake Cupcakes with Maple Cream Cheese Frosting!


INGREDIENTS
1 cup of chopped walnuts
1 pound of carrots
3 large eggs
1/2 cup of buttermilk (or add a teaspoon of lemon juice to regular milk and allow to stand for 10 minutes)
1 teaspoon of vanilla extract
2 cups of sugar
1 cup of vegetable oil
1 tablespoon of orange zest
3 cups of all-purpose flour
1 teaspoon of baking soda
2 teaspoons of baking powder
1 teaspoon of kosher salt
2 teaspoons of ground cardamom
1 teaspoon of ground cinnamon

STEPS!

1 Preheat the oven to 350F. Toast the walnuts in the oven for 5 minutes. Remove from the oven and set aside to cool.

2 Rinse the carrots and peel the rough skins off, then grate the carrots.

3 Place the carrots, buttermilk, oil, sugar, eggs, vanilla extract and orange zest together in a bowl and whisk thoroughly.

4 In another bowl whisk the flour, baking soda, baking powder, salt, cardamom, and cinnamon.

5 Fold the flour mixture into the carrot mixture, being sure not to overmix. Fold in the toasted walnuts until evenly incorporated.

6 Scoop into cupcake papers about 1/2 to 3/4 full and bake for 19-21 minutes at 350F, being sure to rotate the pan after the first 15 minutes of baking. Afterwards allow to cool for 5 minutes before taking the cupcakes out of the cupcake tin and allowing them to fully cool on a wire rack. Frost cooled cupcakes.


Maple Cream Cheese Frosting
1 stick of butter
8 oz cream cheese
3 Table spoons of Maple Syrup
1 teaspoon of vanilla
3 cups of powdered sugar
If you need the to thicken just add more powdered sugar.

Caramel Brownie Cheesecake


Ingredients: 
The crust is simply one box of your favorite brownie mix!

Prep the brownie mix according to the package. Using a greased spring form pour in the brownie batter and bake as it instructs on the box.

I use store bought caramel sauce and hot fudge.

Once the brownies are done and cooled pour some of the caramel sauce over the brownie crust.

Next prep the cheesecake!

White Chocolate Cheesecake Filling

12 ounces white chocolate chips

1 Cup heavy cream

3 Blocks of cream cheese, at room temperature

1/4 Cup confectioners’ sugar

2 Teaspoons vanilla extract

To make the filling, in a heavy saucepan over medium heat, combine the white chocolate and heavy cream, stirring constantly until melted and smooth.

Remove from the heat and refrigerate, stirring occasionally until cool, approx. 30 minutes.

In a large bowl, combine the cream cheese, confectioners sugar and vanilla extract. Using an electric mixer set on medium speed beat until well blended.

Add the cooled white chocolate mixture and beat until light and fluffy, approx 2 minutes.

Pour the filling over the brownie, smooth with a rubber spatula. Cover with aluminum foil and refrigerate overnight.

Once ready to serve drizzle with more caramel sauce and fudge sauce.

Simply Delicious!

Super Simple Banana Bread


Ingredients:
1 Cup Sugar
1/4 Cup Veg. Oil
1 Egg

Combine the above three in mixer until smooth.

Add 3 small Bananas
1 and 1/2 Cups of Flour
2 Teaspoons of Baking Powder.

Bake at 350 for 45 Minutes

Streusel Topping (optional)
1/2 cup butter, softened 1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
2/3 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg 

Beat butter at medium speed with an electric mixer until creamy; gradually add granulated sugar and brown sugar, beating well. Add flour, cinnamon, and nutmeg; beat just until blended. Sprinkle on top of bread and pop it in the oven!

Pumpkin Whoopie Pies with Maple Cream Cheese Frosting!



Ingredients:

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1 1/4 cups granulated sugar
2 large eggs, at room temperature, lightly beaten
1 cup LIBBY'S® 100% Pure Pumpkin
1 teaspoon vanilla extract
PREHEAT oven to 350°F. Lightly grease or line four baking sheets with parchment paper.
COMBINE flour, baking powder, baking soda, cinnamon, ginger and salt in medium bowl. Beat butter and sugar in large mixer bowl on medium speed for 2 minutes. Add eggs, one at a time, beating well after each addition. Add pumpkin and vanilla extract; beat until smooth. Stir in flour mixture until combined. Drop by heaping measuring teaspoons onto prepared baking sheets. (A total of 72 cookies are needed for the recipe.)

BAKE for 10 to 13 minutes or until springy to the touch. Cool on baking sheets for 5 minutes; remove to wire racks to cool completely.

Maple Cream Cheese Frosting
1 stick of butter
8 oz cream cheese
3 Table spoons of Maple Syrup
1 teaspoon of vanilla
3 cups of powdered sugar

Mix cream cheese and butter until smooth. Add Maple syrup. Then slowly add each cup of powdered sugar until smooth. Finally add the vanilla.

Baked Cider Donuts with Cinnamon and Sugar!



Ingredients:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 large egg, lightly beaten
2/3 cup packed brown sugar
1 Stick of butter softened
1/3 cup pure maple syrup
1/3 cup apple cider
1/3 cup sour cream

Preheat oven to 375F

Spray doughnut pan with cooking spray

In medium bowl, whisk together first 5 ingredients.

In large bowl, whisk together remaining ingredients
Fold wet ingredients into dry ingredients blending just until combined

I use my KitchenAid Mixer!

I fill a large plastic zip lock bag with the mix and snip the edge and pipe the mix into the donut pan. Much easier than using a spoon!

Bake 10 minutes. Cool several minutes.

Cinnamon Sugar Mix
1/4 Cup of Sugar
2 Teaspoons of Ground Cinnamon
Mix together

Brush melted butter onto each doughnut and roll in cinnamon sugar.
